I have been thinking all day about the Noma Ferments book event w/ Book Larder: A Community Cookbook Store from last night— and kinda of got all “fuck it!” about the corn and watermelon rind lacto-ferment I made that I did not love— but maybe it’s the start of something else and not the dish itself! I had not thought of it that way before. So I went all Julia Child on it, threw in a pan with a lot of butter, smoked paprika and tried torching it with a lame little torch I got at Goodwill... if only my broiler worked! Much better! The new cookbook is really fascinating.
